Chef’s Technique Will Change The Way You Make Your Meatloaf

Meatloaf and barbecue seem like they shouldn’t go together, but the BBQ Pit Boys share a new spin on an old recipe — meatloaf roll. You’ll need some ground chuck, bacon, hard cheese, onion, celery, salt, pepper, and garlic to create this dish.

The cook chops 1/2 of an onion and 1/2 to 3/4 of a cup of celery. He cuts 1 pound of smoked bacon and sets it aside with the onion and celery. He then wets his cutting board so that the meat doesn’t stick to it and begins to flatten the ground chuck until its 1/2 to 3/4 of an inch thick. Shaping the flattened beef into a rectangle, he then sprinkles salt, pepper and garlic powder on the meat and spreads marinara sauce over the top. Next, he adds the onion, celery, and bacon on top of the marinara and some shaved hard cheese. Starting at one end, he rolls the meat into a roll, making sure he shapes the ends so that it has a nice shape when he’s done.

He places the meatloaf roll on the grill opposite of the coals, cooking it with “indirect heat.” Once the roll is in place, he adds some more marinara on top. His grill maintains a temperature of 275 to 300 degrees Fahrenheit, and he allows the roll to cook for one hour. When the roll is done, he sprinkles some more hard cheese on top and allows it to melt before removing it from the grill. Once it’s off the grill, he lets the meatloaf sit for 10 minutes and then cuts and serves.
